This straightforward deep-fried cutlet snack recipe uses boiled and mashed potatoes and a combination of spices and herbs. **Aloo Cutlet**, commonly known as the **Potato Cutlet** recipe, is an extension of the popular veg cutlet, which is mainly made with a combination of mixed vegetables. It can be a perfect tea-time snack or finger-licking appetiser for any simple to large party or get-together. It is typically served with condiments like tomato sauce or green chutney, but it tastes great without any sides.

The recipe for an **Aloo Cutlet** is straightforward, yet it can be made in many ways. The most common way is to make it with potatoes, spices, and herbs. However, it can also be made with other vegetables and takes one or two additional vegetables. You may add peas or carrots to make it more interesting and healthy. ### For aloo mixture:

* 5 potato *(boiled)*
* 2 chilli *(finely chopped)*
* 2 tbsp coriander *(finely chopped)*
* 1 tsp ginger garlic paste
* ¼ tsp turmeric
* ½ tsp chilli powder
* ½ tsp cumin powder
* ½ tsp garam masala
* ½ tsp aamchur
* ½ tsp chaat masala
* 1 tsp salt
* pinch hing
* bread crumbs

### For slurry:

* 2 tbsp maida
* 2 tbsp corn flour
* ½ tsp salt
* ½ tsp pepper
* ½ cup water

### Other ingredients:

* breadcrumbs
* oil *(for frying)*

## Instructions

1. Firstly, mash the 5 boiled potatoes.
2. Add 2 chilli, 2 tbsp coriander, and 1 tsp ginger garlic paste.
3. Also, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala, ½ tsp aamchur, ½ tsp chaat masala, 1 tsp salt, and pinch hing.
4. Combine and mix well, making sure everything is well combined.
5. Since there is moisture, add 2 tbsp bread crumbs and mix well.
6. To prepare the slurry, add 2 tbsp maida, 2 tbsp corn flour, ½ tsp salt, ½ tsp pepper, and ½ cup water.
7. Mix well, making sure the slurry is smooth and lump-free.
8. Shape the cutlet, dip it into the slurry, and coat it with breadcrumbs.
9. Deep fry the cutlet in hot oil, stirring occasionally.
10. Fry until the cutlet turns golden brown and crispy.
11. Drain off the cutlet to remove excess oil.
