# Aloo Ka Halwa Recipe

## Ingredients

* 5 potato / aloo
* ½ cup ghee / clarified butter
* 1 cup sugar
* ¼ tsp saffron food colour
* ¼ tsp cardamom powder

### for roasting dry fruits:

* 1 tbsp ghee
* 2 tbsp raisins
* 2 tbsp cashew *(chopped)*
* 2 tbsp almonds *(chopped)*

## Instructions

1. firstly, in a pressure cooker take 5 potatoes and pressure cook for 5 whistles.
2. peel the skin of the potato and grate. keep aside.
3. in a large kadai heat ½ cup ghee and add boiled and grated aloo.
4. saute for 5 minutes or until the aloo changes colour slightly.
5. now add 1 cup sugar and ¼ tsp saffron food colour.
6. continuously stir keeping the flame on medium. sugar starts to melt.
7. cook on medium flame until the ghee separates. it takes approximately 15 minutes for ghee to ooze out.
8. the halwa will start to hold shape releasing ghee. this is the perfect consistency we are looking for.
9. in a pan heat 1 tbsp ghee. add 2 tbsp raisins, 2 tbsp cashew and 2 tbsp almonds.
10. roast on low flame until the nuts turn golden brown and crisp.
11. transfer the roasted nuts over the halwa, add ¼ tsp cardamom powder and mix well.
12. finally, enjoy aloo ka halwa topped with more dry fruits.

## Notes

* firstly, make sure to boil the aloo really well, else the halwa will take a long time to cook.

* also, note that the aloo will absorb all the ghee while roasting and after some time it starts to release out the ghee. make sure to roast until then.

* additionally, you can skip the colour or add the colour of your choice.
