# Garlic Podi Recipe

    Firstly, heat 3 tsp oil and roast 1 cup garlic.

    Once the garlic turns golden brown, keep aside.

    In the same pan take ½ cup chana dal, ½ cup urad dal, 2 tbsp toor dal and roast on low flame until the dal turns aromatic.

    Now add 2 tbsp sesame, 1 tbsp cumin, 1 tbsp coriander seeds and roast until the spices turn aromatic.

    Transfer to the plate and keep aside.

    In the pan heat 2 tsp oil, add 1 cup dry coconut, 10 dried red chilli and roast well.

    Fry until the coconut turns golden brown and the chilli are puffed up.

    Also, add a small piece of tamarind and roast well.

    Cool completely, and transfer to the mixer jar.

    Grind to fine powder.

    Now add roasted dal and grind to a coarse powder.

    Further add roasted garlic, 1 tbsp salt and a small piece of jaggery.

## Notes

* Firstly, make sure to roast the garlic until it turns golden and crispy.

* Also, adding dal is optional. However, dal makes podi tasty and nutritious.

* Additionally, you can also add curry leaves and hing for a rich flavour.

* Finally, **Garlic Podi or Ponddu Podi Recipe** stays good for 1 month in an airtight container.
