# Instant Bhature Recipe

## Ingredients

* 2½ cups maida / plain flour / all-purpose flour / refined flour
* ½ cup rava / semolina / sooji
* 1 tsp sugar
* ½ tsp salt
* 1 tbsp oil
* 1 cup soda water *(room temperature)*
* oil for deep frying
* 1 cup chana masala / chole masala *(for serving)*

## Instructions

1. firstly, in a large mixing bowl take 2½ cups maida.
2. add in ½ cup rava. rava helps to make bhatura soft from inside and crisp from outside.
3. also add 1 tsp sugar, ½ tsp salt and 1 tbsp oil.
4. combine well making sure everything is combined well.
5. now add ½ cup of soda water.
6. knead the dough well adding more soda water as required.
7. prepare smooth and soft dough. do not make too soft dough as it absorbs oil.
8. cover the dough with moist cloth and rest for 30 minutes or more.
9. after 30 minutes, knead dough slightly and pinch a small ball sized dough and flatten.
10. roll the dough evenly into circles using rolling pin dusting maida as required.
11. further, roll and get to a circular shape. roll neither too thin nor too thick.
12. when the oil is very hot, drop one bhatura and, press with the spoon to puff up.
13. also once they begin to puff, splash oil over the bhatura till they puff completely.
14. flip over and fry the bhatura till golden brown all over.
15. then drain the bhatura onto tissue paper to remove excess oil.
16. finally, serve instant bhatura with chana masala / chole masala.

    knead the dough well adding more soda water as required.

    prepare smooth and soft dough. do not make too soft dough as it absorbs oil.

    cover the dough with moist cloth and rest for 30 minutes or more.

    after 30 minutes, knead dough slightly and pinch a small ball sized dough and flatten.

## Notes

* firstly, make sure the soda is freshly opened and at room temperature.

* also,[**traditional bhature**](/recipes/bhatura-bhature-recipe-restaurant-style) are prepared with curd and baking powder / baking soda.

* additionally, rest the dough for minimum of 30 minutes or more.

* furthermore, adding sugar gives nice colour while frying.
