# Kaju Biscuits Recipe

## About

It is a straightforward, tasty biscuit recipe with cashew paste and plain flour. **Kaju Cookies**, more commonly known as **Kaju biscuits**, are rich and flavoured cookies that melt in the mouth when they come in contact with saliva. They are a premium biscuit that can be easily shared as a favourite tea-time snack with a cup of tea or coffee. They can also be served as a dessert snack, making them ideal sweets to share with friends and family.

There are many ways to make a simple and tasty **Kaju cookie recipe**. The most common way is to combine powdered cashew and plain flour. However, this can be easily extended by adding other premium nuts like almonds, walnuts, and [pistachios](https://en.wikipedia.org/wiki/Pistachio). Further, the same cookies can also be made with wheat flour or even a combination of wheat and plain flour to make them healthier. Finally, the same recipe can be shaped in any desired shape to make it more attractive and presentable.

## Ingredients

* 1½ cup maida / plain flour
* 1 cup powdered sugar
* 2 tbsp milk powder
* pinch salt
* ½ tsp baking powder
* 2 tbsp cashew *(crushed)*
* ½ cup ghee

## Instructions

1. Firstly, in a large bowl, place a sieve and add 1½ cup maida, 1 cup powdered sugar, 2 tbsp milk powder, pinch salt, and ½ tsp baking powder. Sieve well.
2. Add 2 tbsp cashew, mix well, making sure all the dry ingredients are well combined.
3. Now add ½ cup ghee, crumble and mix well. Gently mix the flour and ghee mixture.
4. Lightly crumble with fingers and get the mixture into dough.
5. Do not knead the dough, just press and make a soft dough. If you feel the dough is dry, add some ghee or butter. but do not add milk or water, as it makes cookies dense.
6. Flatten the dough, and roll slightly thick.
7. Using a bottle cap make a moon-like shape.
8. Now bake the cookies in a kadai, by adding salt at the bottom of the kadai.
9. Cook on a medium flame for 12 to 15 minutes or until the bottom of the cookies gets golden brown.
10. You can also bake the cookies in the oven at 170 degrees Celsius for 12 minutes. Cool the cookies completely before removing them from the plate.
11. Finally, enjoy the crunchy Kaju Biscuits Recipe with a cup of coffee.

## Notes

* Firstly, adding milk powder enriches the cookie; do not skip it. You can alternatively use custard powder.

* Additionally, in place of ghee, you can use softened butter.

* Also, do not brown the cookie, as it turns hard once cooled.
