## About

**Mix Veg Paratha** is a wholesome Indian flatbread packed with flavour and nutrition. It combines several finely grated vegetables, such as carrots, capsicum, cabbage, and potatoes, to create a well-balanced stuffing. Each vegetable contributes fibre, minerals, and natural sweetness, making it a complete meal on its own. The dough is kneaded until soft, rolled evenly, and roasted on a hot tawa with ghee until golden and crisp. It delivers multiple textures in one bite, from soft layers to flavorful fillings. The mix of vegetables adds freshness and depth, making every paratha unique in taste. It is a quick and hearty option for breakfast or lunch. Moreover, it remains soft for hours, making it perfect for travel or office meals. With every serving, you receive a rich blend of nutrients and a comforting, homemade taste.

This paratha serves as an ideal lunchbox recipe for working adults and school-going children. It does not require any side dish because the stuffing is flavorful and filling. Parents often pack it for kids who avoid vegetables, as it hides nutrition in a delicious form. The combined flavours from multiple vegetables make it suitable for family meals and festive brunches alike. It offers a good balance of carbohydrates, fibre, and vitamins in one serving. Preparing the stuffing is simple and requires only basic kitchen spices. You can easily adjust the spice level for adults or kids. It is a great way to use leftover vegetables creatively. This makes Mix Veg Paratha a smart and satisfying dish for any occasion.

**Fun Fact:**

<Note>
  Dhaba chefs often mix leftover dry sabzis into paratha stuffing at night, giving rise to the now-famous Mix Veg Paratha, which is loved across Indian highways.

## Tips

The classic Mix Veg Paratha Recipe – Dhaba-Style is a wholesome, stuffed flatbread made with a mix of vegetables and spices. It is rich in flavour, soft in texture, and ideal for breakfast, lunch, or tiffin.

1. **Grate evenly:** Grate all vegetables finely. This ensures uniform cooking and makes the stuffing smooth and easy to roll.

2. **Moisture:** Remove excess water from the grated vegetables. Doing this prevents the dough from turning soggy.

3. **Seasoning:** Add salt and spices like cumin, coriander, and garam masala. Proper seasoning brings out the flavour of each vegetable.

4. **Stuffing:** Close the edges of the stuffed dough tightly. This keeps the filling intact while rolling and roasting.

5. **Roasting:** Cook on medium flame with ghee on both sides. Slow roasting helps achieve a golden crust and soft interior.
