# Ragi Cake Recipe

## About

It is basically a simple and spongy cake recipe prepared with ragi flour and other dry, wet ingredients. In other words, **Ragi Cake** is a healthy and nutritious alternative to sugary and flashy cake recipes. It is also a popular choice due to the fact that it is a gluten-free option it presents. In addition, ragi is rich in fiber, iron, and calcium, and hence serving it as a cake makes it more interesting and more likable.

There are many different ways to make this simple and healthy **Ragi Cake Recipe**. The most common and nutritious way is to make it just ragi flour. However, the cake may turn dense and may not be on par with the traditional cake counterparts. The other most common way is to make it with a combination of ragi flour and plain [flour](https://en.wikipedia.org/wiki/Flour) combination. This can be an ideal choice, particularly for Weight Watchers. In addition, the cake can be frosted with a choice of frosting cream as per individual preferences.

## Ingredients

* 1 cup jaggery *(powdered)*
* ½ cup curd
* ¼ cup oil
* 1½ cup milk
* 2 cup ragi flour
* 2 tbsp cocoa powder
* 1 tsp vanilla extract
* pinch salt
* ¼ tsp baking soda
* 1 tsp baking powder

## Instructions

1. Firstly, in a large bowl take 1 cup jaggery, ½ cup curd, ¼ cup oil, and ½ cup milk.
2. Whisk and mix well making sure everything jaggery melts completely.
3. Add 2 cup ragi flour and 2 tbsp cocoa powder.
4. Also add 1 tsp vanilla extract, pinch salt, ¼ tsp baking soda, and 1 tsp baking powder.
5. Mix well making sure everything is well combined.
6. Further, add milk as required and mix until the batter turns silky smooth consistency.
7. Transfer the cake batter to a cake mold
8. Also, tap twice to level up uniformly and remove any air bubbles if present.
9. Place the cake pan into a preheated cooker. To prepare the cake in a pressure cooker add 2 cups of salt and close the lid of the cooker without keeping the gasket and whistle. heat for 5 to 10 minutes. As a result, gives a preheated oven atmosphere.
10. Cover and cook on a medium flame for 45 minutes. You can alternatively, preheat and bake at 180-degree Celsius for 45 minutes.
11. Insert a toothpick and check if the cake has baked completely.
12. Cool the cake and then unmold the Ragi chocolate cake.
13. Finally, cut the Ragi Cake into pieces and enjoy.

## Notes

* Firstly, you can mix 1:1 ratio of ragi flour and maida if you want a light cake.

* Also, you can add butter for richness to the cake.

* Additionally, do not over-mix the batter, as the cake turns hard and dense.

* Finally, **Ragi Cake recipe** can also be prepared with sugar, however, I have used jaggery to avoid sugar.
