An easy and simple, yet interesting South Indian classic dessert recipe made with 7 cups of sweet-making ingredients. 7 Cup Barfi or 7 Cup Cake is a popular dessert that is made quite often for small to big occasions or even a wide range of festivals. It has a rich, creamy, and dense texture thus making a classical traditional cake recipe. It is traditionally prepared in South India but has significantly grown in popularity across India and is made for various reasons. There are many different variations to the 7 Cup Barfi recipe which mainly differs with the set of ingredients used in it. The ingredients used can be mixed and matched with some key ingredients repeated. In short, some key ingredients are added twice and the less important ingredients are skipped. In addition, the color of the barfi can be experimented with individual preference. Also, the shape and texture can be altered with different sets of sugar string consistency.Ingredients
- 1 cup besan
- 1 cup coconut (grated)
- 1 cup cashew powder
- 2 cup sugar
- 1 cup ghee
- 1 cup milk
- pinch saffron food colour
- ½ tsp cardamom powder
Instructions
- Firstly, in a large kadai take 1 cup besan, 1 cup coconut, 1 cup cashew powder, 2 cup sugar, 1 cup ghee and 1 cup milk.
- Mix well making sure everything is well combined.
- Now turn on the flame and start cooking on medium flame.
- Stir until the mixture starts to thicken.
- Now add a pinch saffron food colour and mix well.
- Cook until the mixture starts to separate the pan and holds shape.
- Add ½ tsp cardamom powder and mix until the mixture starts to turn frothy.
- Transfer to the tray and level up uniformly.
- Rest for 30 minutes and cut into pieces.
- Finally, enjoy 7 Cup Burfi stored in an airtight container for a month.

Notes
- Firstly, in total I have used 7 cups of ingredients to prepare the sweet. you can vary the ratio of ingredients to your choice.
- Also, the burfi will harden if you overcook and turn soft if you cook less. so adjust the cooking time to your preference.
- Additionally, I have added a saffron colour to make the burfi look attractive. However, it is optional.
- Finally, 7 Cup Burfi recipe tastes great when made with homemade ghee.
