It is a simple and popular North Indian Chaat recipe made with Potato patties with chaat chutney and yogurt toppings. Basically, Aloo Tikki Chaat commonly known as Tikki Chaat is known for its sweet, sour, and spicy offerings with the richness of mashed potatoes. It is a favorite chaat recipe, especially with kids and young audiences. Hence it often served as a part starter or appetising snack apart from being popularly consumed as street food. There are multiple ways to prepare this lip-smacking Kurkuri Aloo Tikki Chaat Recipe, but the most common way is to serve it with yogurt. With yogurt, it is also topped with spicy green chutney and sweet Date Imli Chutney. This is the most basic and popular version. However, it is also made with Ragda or Chole gravy curry to make it a more savory and spicy version. It is more popular in Mumbai and Western India.

Ingredients

for chana stuffing:

  • 2 tbsp oil
  • 1 tsp cumin
  • pinch hing
  • 4 chilli (finely chopped)
  • 1 inch ginger (finely chopped)
  • 2 tbsp cashew (chopped)
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • 1 tsp coriander cumin powder
  • 1 tsp amchur
  • ½ tsp salt
  • 1 cup chana dal (boiled)
  • 2 tbsp coriander (finely chopped)

for aloo covering:

  • 3 potato (boiled & mashed)
  • ½ tsp salt
  • ½ tsp pepper powder
  • 2 tbsp coriander (finely chopped)
  • 2 tbsp corn flour
  • oil (for frying)

Instructions

  1. Firstly, in a pan heat 2 tbsp oil. add 1 tsp cumin, pinch hing, 4 chilli, 1 inch ginger and saute until it turns aromatic.
  2. Add 2 tbsp cashew and roast till the cashew turns crunchy.
  3. Keeping the flame on low add ½ tsp turmeric, ½ tsp chilli powder, 1 tsp coriander-cumin powder, 1 tsp amchur and ½ tsp salt.
  4. Saute on low flame until the spices turn aromatic.
  5. Now add pressure-cooked chana dal and mix well.
  6. Mash slightly, making sure everything is well combined.
  7. Add in 2 tbsp coriander and mix well. Chana dal stuffing is ready. Keep aside.
  8. Now in a large bowl take 3 boiled and mashed potato, ½ tsp salt and ½ tsp pepper powder.
  9. Also, add 2 tbsp coriander and 2 tbsp corn flour.
  10. Mix well making sure everything is well combined.
  11. To prepare the tikki, grease your hands with oil and pinch a ball-sized dough.
  12. Flatten slightly, and stuff into a portion of prepared aloo stuffing.
  13. Stuff in and secure making sure the stuffing doesn’t come out.
  14. Flatten slightly, to shape into tikki.
  15. Now fry in hot oil, keeping the flame on medium.
  16. Fry both the sides until they turn golden brown and crispy from both the sides.
  17. Now to prepare the chaat, place the tikki onto the plate.
  18. Top with curd, green chutney, tamarind chutney, chaat masala and coriander.
  19. Finally, Kurkuri Aloo Chaat Recipe can be topped with sev before serving.

The recipe is simple and an extension to the simple Aloo Patties recipe. Yet to make it street style some simple tips –
  1. Homemade Tikki – Well the tikki’s prepared at home are the best and healthy choice for any recipes using the tikki. However, fresh store-bought tikki’s are also a good choice for this chaat recipe.
  2. Chaat Chutney – Spicy and fresh green chutney is a must for this recipe. Again homemade is recommended but any lip-smacking store-bought chutney should be good. Also, you can add red chutney, Imli chutney, and even green chili chutney to spice it up.
  3. Yogurt vs. Chole Curry – Well, the traditional and popular way to make Aloo Tikki Chaat is with yogurt toppings. Yet, you may go with chole gravy or even Ragda gravy to make it a spicy and savory chaat recipe.
  4. Toppings – The toppings like onion, tomatoes, fine or medium-sized sev, pomegranate, coriander leaves, and crushed mixture are all welcome to this recipe.
  5. Experiment – The chaat is open-ended and can be easily experimented with and customized. With tikk or pattiese, you can also add crushed samosa or even papdi to make more flavored or for more strong base.

  • Firstly, adding corn flour helps to make crispy tikki and prevents it from breaking.
  • Also, prepare a spicy stuffing, as the spice will be balanced by potato covering.
  • Additionally, double frying tikki makes tikki crispy and kurkuri.
