A straightforward and flavoured pulao rice recipe prepared with mild spices and long-grain basmati rice. Kashmiri Pulao, also known as saffron rice sweet pulao, is a one-pot meal with basic spices and dry fruits. It can be a perfect party meal or even a potluck rice meal that can please any age group. Even though it has a huge fan following, some do not like it due to its sweet taste. Hence, it is typically served with spicy curry like mirch ka salan or a simple yoghurt spiced raita. There are many ways to make this tasty and straightforward Kashmiri Pulao Rice Recipe. The most common way is to make it with basic and mild spices, with a sweet and mild spice flavour. This is the authentic way of making the pulao with less or no vegetables. However, it can also be made with vegetables like potatoes, carrots, beans, and peas. In addition, if you wish to make savoury and spicy, you may use basic spices like red chillies, green chillies, and garam masala powder.Ingredients
- 2 tbsp ghee
- 2 tbsp cashew
- 2 tbsp almonds
- 2 tbsp raisins
- 1 inch cinnamon
- 1 pod black cardamom
- ½ tsp cloves
- 1 tsp cumin
- 1 bay leaf
- 1 onion (sliced)
- 1 inch ginger (grated)
- 1 tsp fennel
- ½ tsp cardamom powder
- 2 cup water
- 1 cup basmati rice (soaked)
- 1 tsp salt
- few saffron strands
- few pomegranate
Instructions
- Firstly, in a pan, heat 2 tbsp ghee and 2 tbsp cashew, 2 tbsp almonds and 2 tbsp raisins.
- Fry on a low flame till it turns crunchy, keep aside.
- In the same ghee, add 1 inch cinnamon, 1 pod black cardamom, ½ tsp cloves, 1 tsp cumin and 1 bay leaf. Saute till the spices turn aromatic.
- Also add 1 onion, 1 inch ginger and fry till the onion turns golden brown.
- Now add 1 tsp fennel, ½ tsp cardamom powder and saute slightly.
- Further, add 2 cups of water, 1 cup of basmati rice, and 1 tsp of salt. Stir and bring to a boil.
- Now add a few saffron strands, cover and simmer for 20 minutes.
- Once the rice is cooked well, add fried nuts, a few pomegranate seeds, and rest for 5 minutes.
- Finally, enjoy Kashmiri Pulao Recipe topped with fresh pomegranate.
Step-by-step

Notes
- Firstly, add fried nuts just before serving to retain the crunch.
- Also, adding the cardamom powder enhances the flavour of cardamom more in the pulao.
- You can also add chopped apple or pineapple to the pulao while serving.
