Masala for mixed veg kootu

  1. Firstly, in a pan heat 1 tsp coconut oil. Add 1 tsp chana dal, 1 tbsp urad dal, 2 tsp coriander seeds, 1 tsp cumin, ¼ tsp methi, 1 tsp pepper, 1 inch cinnamon, 4 dried red chilli and few curry leaves.
  2. Saute on low flame until the spices turn aromatic.
  3. Now add pinch hing, 1 tsp poppy seeds and ½ cup coconut.
  4. Turn off the flame and saute until the coconut turns aromatic.
  5. Cool completely and transfer to the mixer jar.
  6. Add water and grind to smooth paste. Keep aside.

Vegetable preparation for kootu

  1. Firstly, in a vessel heat 1 tbsp oil, add 1 carrot, 1 potato and saute for 2 minutes.
  2. Add 5 beans, ½ cup bottle gourd, 3 tbsp peas, ½ tsp turmeric, 1 tsp salt. Saute for 1 minute until the oil is coated well for vegetables.
  3. Further add 3 tbsp peanuts, 3 cup water cover and boil for 5 minutes.
  4. Once the vegetables are almost cooked, add ½ cup pumpkin and boil for 2 minutes. We add sweet pumpkin later as it does not take much time to cook.
  5. Now add ¼ cup tamarind extract, 2 tomato, small piece jaggery and boil for 5 minutes.
  6. Once everything is cooked well add 1½ cup cooked toor dal, prepared masala paste and mix well.
  7. Add water adjusting the consistency as required, and also check for salt.
  8. Continue to boil for 3 more minutes until all the masala and flavours are well absorbed.
  9. To prepare the tempering, heat 2 tbsp ghee. Add 1 tsp mustard, 1 dried red chilli and few curry leaves. Splutter the tempering, and pour over the kootu.
  10. Finally, enjoy Mixed Vegetable Kootu with hot steamed rice, idli or dosa.

Notes

  • Firstly, if you are serving kootu for idli and dosa, then make sure to keep the consistency slightly thick.
  • Also, you can add vegetables of your choice to make it nutritious and healthy.
  • Additionally, do not overcook the vegetables as they turn mushy.
  • Finally, Mixed Vegetable Kootu Recipe has no onion, and no garlic recipe, so can be served for any festive occasion.
