It is a simple and easy Indian flatbread recipe with spiced potato stuffing and baked in a traditional tandoor oven. Aloo Kulcha popularly known as Amritsari Kulcha is a popular alternative to the tandoori roti or garlic naan bread. Unlike other Indian breads, the kulcha is made with plain flour or maida, making it an attractive loaf of tasty bread. The bread is typically served with a range of yogurt dips and raita, but it can also be served with any Indian curries. There are many different types of Kulcha recipes and the variation mainly depends upon the type of stuffing used. The most popular stuffing has to be the potato, but there is no limit to the different types of stuffing that can be made. The other most popular stuffing combination is Aloo Gobi stuffing with the same bread dough. In addition, traditionally the bread is baked in the tandoor oven, but it can also be baked using tawa on a gas cooktop.Ingredients
for dough:
- 3 cup maida
- ½ tsp baking powder
- ¼ tsp baking soda
- 1 tbsp sugar
- ½ tsp salt
- ½ cup curd
- water (for kneading)
- 2 tbsp ghee
for stuffing:
- 3 potato (boiled & grated)
- 1 onion (finely chopped)
- ½ tsp chilli powder
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- 1 tsp aamchur
- ¼ tsp ajwain
- ½ tsp salt
- ½ tsp kala namak
- ½ tsp ginger paste
- 2 chilli (finely chopped)
- 2 tbsp coriander (finely chopped)
for rolling:
- kalonji
- sesame
- coriander (finely chopped)
- chilli powder
Instructions
Dough kneading for kulcha:
- Firstly, in a large bowl take 3 cup maida, ½ tsp baking powder, ¼ tsp baking soda, 1 tbsp sugar and ½ tsp salt. Mix well.
- Add ½ cup curd, and water. Start to knead the dough adding water as required.
- At first, the dough will be sticky. Keep kneading to make the dough soft and smooth.
- Also, add 2 tbsp ghee and continue to knead the dough.
- Knead to smooth and soft dough, tuck the dough and rest for 30 minutes.
Aloo stuffing for kulcha:
- Firstly, in a large bowl take 3 potato. Make sure to grate the boiled potato, so it will be easy while rolling the kulcha.
- Add 1 onion, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp aamchur, ¼ tsp ajwain, ½ tsp salt, ½ tsp kala namak and ½ tsp ginger paste.
- Also, add 2 chilli, 2 tbsp coriander and mix well.
- Aloo stuffing is ready for preparing kulcha. Keep aside.
Rolling and roasting kulcha on tawa:
- Firstly, take the dough and dust with madia.
- Stuff a ball sized stuffing into the dough and seal.
- Now roll gently keeping it uniform thickness.
- Spread some water on top, sprinkle kalonji, sesame, coriander and chilli powder.
- Flip over and spread water over kulcha. This helps kulcha to stick on the tawa.
- Furthermore, slowly flip the kulcha and put it on hot tawa. Sprinkle salt water, as it helps to stick the kulcha well.
- After a minute, flip the tawa upside down and cook the kulcha directly on flame till they turn golden brown and puff up.
- Gently scrape the kulcha from bottom and remove.
- Also brush some butter.
- Finally, serve Aloo Kulcha Recipe hot with your favourite curry like chana masala.

Tips
The recipe does not have any complicated steps and ingredients, yet some critical tips for a soft Aloo Kucha are –- Flour Type – Traditionally, the bread kulcha is made with plain flour or maida flour. This flour makes it ideal for texture and taste. However, wheat flour or a combination of wheat and plain flour can also be used.
- Stuffing – The stuffing has to be thick and silky without any lumps in between. This helps to stuff easily and also roll the bread without any difficulty.
- Cooking Technique – Traditional ovens can be difficult to source to bake this kulcha at home. This recipe post shows a practical solution for using a tawa and gas cooktop mimicking the tandoor oven cooking.
- Accompaniment – Generally, any sour and creamy yogurt dip or raita makes it a perfect accompaniment. Yet any dry or gravy-based curry can be a perfect choice too.
- Variations – The stuffing can take any type of cooked vegetable mash and it is open-ended. In addition, the dough can also be prepared with a 1:1 ratio of wheat and plain flour.
Notes
- Firstly, you can use wheat flour instead of maida for a healthy alternative.
- Also, keep the aloo stuffing masaledar else the kulcha will not taste great.
- Furthermore, knead to smooth a soft dough else kulcha will be chewy.
- In addition, you can also use oven or tandoor for baking the kulcha instead of tawa. But never use nonstick tawa as it slips while reversing.
- Finally, applying water is mandatory to Aloo Kulcha Recipe. This helps naan or kulcha to stick to tawa and can reverse the tawa and cook directly on flame.
