Ingredients
- 2 pack rice noodles
- 2 tsp oil
- 3 cloves garlic (finely chopped)
- 1 inch ginger (finely chopped)
- ½ onion (finely chopped)
- 2 stem spring onion (chopped)
- ½ carrot (thinly sliced)
- ½ cup cabbage (thinly shredded)
- 1 capsicum (thinly sliced)
- salt to taste
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1-2 tbsp chilli sauce
- ½ tsp pepper (crushed)
- ¼ cup bean shoots (optional)
Instructions
- firstly, in a boiling water add 2 packs of rice noodles or any noodles of your choice.
- furthermore, stir once and get the water to boil. or cook as per instructions.
- drain the water completely, and keep aside.
- heat a large kadai with some oil.
- further, saute garlic and ginger.
- also saute onions and spring onions white on high flame.
- furthermore, add chopped vegges like carrot, cabbage and capsicum.
- saute till they shrink in size. do not over cook as the vegetables will loose the crunchiness.
- also add salt, soy sauce, vinegar and chilli sauce. give a good mix.
- further add the cooked noodles.
- then add crushed pepper and bean shoots.
- mix well. do not over mix as the noodles will break.
- finally, serve hakka noodles garnished with some fresh spring onions green.
Step-by-step

firstly, in a large vessel take 8 cup water, 2 tbsp oil, 1 tsp salt.

once the water comes to a boil, add 2 pack noodles.

stir and boil for 3 minutes or until the noodles turn al dente. refer package instructions to know the cooking time.

drain off the noodles and rinse with cold water to stop the cooking process. keep aside.

in a large wok heat 2 tbsp oil and add 2 clove garlic, 1 chilli, 2 inch ginger and 2 tbsp spring onion.

stir fry on high flame.

now add ½ onion, ½ capsicum, ½ cabbage, 1 carrot, 2 beans. stir fry until the vegetables shrink slightly.

further add 2 tbsp chilli sauce, 2 tbsp soy sauce, 2 tbsp tomato sauce, ½ tsp salt and ½ tsp pepper powder.

stir fry until the sauces well combine.

now add boiled noodles, 2 tbsp vinegar and stir fry.

also add few bean sprouts and 2 tbsp spring onions. stir fry.

finally, enjoy veg hakka noodles garnished with more spring onions.

Chowmein hakka noodles using chings chowmein hakka noodles masala
-
firstly, in a large vessel boil 10 cup water.
-
once the water comes to a boil place a pack of chings veg hakka noodles (300 gm)

boil the noodles for 2 minutes or till it turns al dente.

drain off the water from noodles and pour 1 cup of cold water to prevent from further cooking.

drizzle 1 tsp oil and mix gently, to avoid noodles from sticking to each other. keep aside.

now in a large kadai heat 3 tbsp oil.

add ½ onion, ½ carrot, 1 cup cabbage, ½ capsicum and 10 beans.

stir fry on high flame for 2 minutes or until vegetables shrink slightly.

add boiled noodles and 1 pack chowmein hakka noodles masala.
- sprinkle 2 tbsp water and stir-fry 2 minutes.
- do not add any extra salt as chings masala contains salt.
- finally, serve chowmein hakka noodles garnished with spring onions.

Notes
- firstly, make sure not to overcook the noodles as they turn mushy while stir-frying.
- also, add vegetables of your choice to make noodles healthy and nutritious.
- additionally, adjust the amount of chilli sauce based on the spice level.
