Ingredients

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 inch ginger
  • 2 chilli
  • 3 cloves garlic
  • ½ capsicum (finely chopped)
  • ½ cup peas
  • 10 beans (chopped)
  • 3 cup palak / spinach (chopped)
  • 3 potato (boiled & mashed)
  • ½ cup paneer (grated)
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • 1 tsp aamchur
  • ½ tsp salt
  • 2 tbsp bread crumbs
  • 1 tbsp corn flour
  • 2 tbsp coriander (chopped)
  • cashew (for garnishing)

Instructions

  1. firstly, heat 2 tbsp oil. add 1 tsp cumin, 1 inch ginger, 2 chilli and 3 cloves garlic.
  2. saute on medium flame until its rosated well.
  3. add ½ capsicum, ½ cup peas, 10 beans and stir fry for 2 minutes. you can feel free to add any green vegetables.
  4. also, add 3 cup palak and saute until the palak shrinks well. you can also blanch the palak and make puree. however, i recommend sauteing to reduce the water content in the kabab.
  5. cool completely, and grind to a coarse paste. make sure to pulse and grind to avoid vegetables from releasing water. keep aside.
  6. in a large bowl take 3 potato and ½ cup paneer. adding paneer is optional, however, it gives a nice flavour and softness to the kabab.
  7. add ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp chilli powder, ½ tsp turmeric, 1 tsp aamchur and ½ tsp salt.
  8. add in prepared green vegetable paste. if it’s too watery then you end up adding more breadcrumbs.
  9. mix well making sure all the spices are well combined.
  10. further add 2 tbsp bread crumbs, 1 tbsp corn flour and 2 tbsp coriander.
  11. mix well forming a dough consistency.
  12. with a greased hand make a small ball-sized tikki.
  13. place cashew in the centre and press gently.
  14. deep fry in hot oil keeping the flame on medium.
  15. fry until the kabab turns golden brown and crispy.
  16. drain off over the kitchen towel to remove excess oil.
  17. finally enjoy hara bhara kabab with mayonnaise or tomato sauce.

The most common or traditional way is to serve with green chutney or min chutney mixed with yogurt. You may also serve it with different types of tomato sauces, mayo sauce, or even samosa tamarind chutney.
You may prepare these in an oven or in an air fryer, which does not require oil to fry these. However, note that without oil frying these do not turn crisp and hence may not be attractive and tasty.
Yes certainly you can use different types of flour to make these hara bhara kebab. Perhaps, you can use rice flour, chickpea flour, and corn flour as alternatives to breadcrumbs. I personally recommend bread crumbs as they are more effective and turn these kebabs crunchy.
Yes you may replace the mashed potatoes with raw banana or sweet potatoes. It should help to absorb the moisture and eventually shape these kebabs. Also, you can use tofu or paneer grate as an alternative to the potato mash.
Yes certainly you can freeze them. Basically, you need to shape these patties and then freeze them in a zip-lock bag or airtight container. Note that, be careful with the shape of these patties as may not want to dent its shape. These frozen patties should easily last long 2-3 months and whenever you need them, you need just thaw them and deep fry them.
Yes you can use a blender to grind the vegetable mixture. However, note that it should not be a smooth paste. Try to make it a coarse paste so that it can be easily shaped and also helps to deep fry them easily without dissolving.
While you may use frozen spinach or any frozen vegetable for this recipe, fresh vegetables are most preferred. Frozen vegetables may affect the crunchiness and also flavor of the kebabs.
Well, none of the ingredients used in this recipe contains gluten, except the breadcrumbs. Breadcrumbs are added for binding and hence can be easily replaced with gluten-free breadcrumbs or even corn flour for same purpose.
Yes you can make these vegan by skipping paneer. Paneer is not mandatory and can be skipped or replaced with tofu.
