It is a popular and tasty street food recipe from India with a combination of flavors it has to offer. There are myriad types or variations within the Frankie or Roll recipes, but the most popular one is the Veg Frankie or Veg Kathi Roll recipe. Typically, the roll is made with vegetable patties which are made with a combination of vegetables like carrots, beans, potatoes, and peas. The choice of vegetable is open-ended and it is up to individual taste and preference. Additionally, the patties or rolled inside flatbread or roti with sliced onions and herbs with a range of chutney and condiments sauces. There are different types of roll or Frankie recipes across India and the variations depend upon the place it is prepared. The most common is Veg Frankie and Meat-based Frankie recipe. The choice of patties makes it a filling, complete, and balanced meal. It also makes it an ideal lunch or dinner meal or even a kid’s tiffin box meal. Typically, Kathi Roll is made with tomato sauce and mayo sauce. But this recipe can take any type of sauce to have different flavors and tastes.

Ingredients

for dough:

  • 2 cup maida
  • ½ cup wheat flour
  • ½ tsp salt
  • ¼ cup curd
  • water (for kneading)
  • oil (for roasting)

for stuffing:

  • 2 tbsp oil
  • 1 tsp cumin
  • pinch hing
  • 2 chilli (finely chopped)
  • 2 cloves garlic (finely chopped)
  • ½ tsp ginger paste
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp aamchur
  • 2 tbsp chilli sauce
  • 2 tbsp tomato sauce
  • 3 potato (boiled & mashed)
  • ½ tsp salt
  • 2 tbsp coriander (finely chopped)
  • 2 tsp lemon juice
  • oil (for roasting)

for chilli vinegar:

  • 3 tbsp vinegar
  • 2 chilli (finely chopped)
  • ¼ tsp salt

for roll:

  • green chutney
  • coriander
  • chaat masala
  • onion
  • tomato sauce

Instructions

How to make roti for frankie:

  1. Firstly, in a large bowl take 2 cup maida, ½ cup wheat flour, ½ tsp salt and ¼ cup curd.
  2. Mix well making sure everything is well combined.
  3. Now add water as required and knead to smooth and soft dough.
  4. Grease the dough with oil, cover and rest for 20 minutes.
  5. After the dough has rested well, knead the dough again and pinch a ball-sized dough.
  6. Dust with maida and roll thin.
  7. Now cook the roti on hot pan spreading oil.
  8. Flip over and cook both sides.
  9. Also, spread the oil and cook until the roti is cooked from both sides. Keep aside.

How to make stuffing for kathi roll:

  1. Firstly, in a pan heat 2 tbsp oil. add 1 tsp cumin, pinch hing, 2 chilli, 2 cloves garlic and ½ tsp ginger paste. Saute well until the raw aroma goes off.
  2. Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp aamchur, 2 tbsp chilli sauce and 2 tbsp tomato sauce.
  3. Saute on low flame until the spices are well combined.
  4. Now add 3 potato, ½ tsp salt and mix well.
  5. Mix until the spices are well combined.
  6. Now add 2 tbsp coriander, 2 tsp lemon juice and mix well.
  7. Once the mixture is cooled slightly, shape the tikki.
  8. Roast on hot pan adding oil as required.
  9. Roast both the sides until the tikki turns golden brown and crispy. Keep aside.

How to make chilli vinegar:

  1. In a small bowl take 3 tbsp vinegar, 2 chilli and ¼ tsp salt.
  2. Mix well, and chilli vinegar is ready to use.

How to assemble veg frankie.

  1. Firstly, take roti and spread green chutney.
  2. Place the prepared aloo tikki, and top with coriander, chaat masala, onion, chilli vinegar and tomato sauce.
  3. Roll tight and wrap in butter paper.
  4. Finally, Veg Frankie Recipe is ready to enjoy with tomato sauce.

Tips

The recipe is no rocket science and takes only basic ingredients to make it. Yet some important and basic tips and suggestions are –
  1. Wrap Quality – The wrap should be soft and moist so that it can be easily rolled. If the roti wrap turns hard, it may not be usable or to shape it.
  2. Rolling Technique – Place the vegetables and patties at the center. Also, wrap it tightly so that the stuffing and sauce do not ooze out while eating it.
  3. Condiments – Try to mix and match the sauce so that all flavors are combined to make it lip-smacking. In short, try to have the sweet, spicy, and savory flavors added to it.
  4. Vegetables Stuffing – Keep it simple and use basic vegetables like onions, carrots, and shredded lettuce.
  5. Spice Mix – You may top it up with Frankie masala to make it more flavored and exciting.

Notes

  • Firstly, make sure to not overcook the roti as it hardens and does not remain soft after some time.
  • Also, you can use frankie masala instead of using chaat masala.
  • Additionally, you can top it with cheese to make a cheesy kathi roll.
