About
Veg kurma is a simple and flavoured South Indian special coconut-based curry prepared with myriad vegetable options and multiple spice combinations. It is most commonly known as mixed vegetable korma. Veg korma is typically served as a side dish for roti, poori, or flatbread. However, it can also be served with other South Indian breakfast recipes like dosa, idli, and rice-based meals. In addition, it can also be a wonderful side dish for different types of flavoured rice. There are different types of Mixed Veg Kurma recipes across various states and regions of India. In North India, it is prepared with red colour textured, without using coconut and basic spices. However, in South India, it is mainly prepared with coconut as the main ingredient. The use of coconut may vary; it can be either fresh coconut grate or freshly prepared coconut milk. Both help to make a flavoured and creamy curry, ideal for a wide range of side dishes.Ingredients
for masala paste:
- 1 cup coconut (grated)
- 8 cashew / kaju
- 1 inch ginger
- 1 clove garlic
- 2 chilli
- 2 tbsp poppy seeds / khus khus
- 1 tsp coriander seeds
- ½ tsp fennel / saunf
- handful coriander
- ¼ cup water
for kurma:
- 4 tsp oil
- 1 bay leaf
- 1 inch cinnamon
- 2 pods cardamom
- 3 cloves
- 1 onion (finely chopped)
- 1 tomato (finely chopped)
- ½ carrot (chopped)
- 10 florets cauliflower / gobi
- 3 tbsp peas / matar
- 1 potato (chopped)
- 5 beans (chopped)
- 1 tsp salt
- 2 cup water
- 1½ cup water
Instructions
- firstly, in a large kadai heat 4 tsp oil and saute spices.
- add 1 onion and saute well.
- further, add 1 tomato and saute until soft and mushy.
- now add vegetables and 1 tsp salt.
- saute for 2 minutes or until vegetables are stir-fried.
- also, add 2 cup water and stir well.
- cover and boil for 10 minutes or until vegetables are almost cooked.
- add in prepared masala paste to the cooked vegetables and stir fry for 2 minutes.
- now add 1½ cup water and stir well.
- cover and cook for 10 minutes or until vegetables are cooked completely.
- finally, enjoy veg kurma with poori or chapati.
Step-by-step

firstly, in a large kadai heat 4 tsp oil and saute 1 bay leaf, 1 inch cinnamon, 2 pods cardamom and 3 cloves.

add 1 onion and saute well.

further, add 1 tomato and saute until soft and mushy.

now add ½ carrot, 10 florets cauliflower, 3 tbsp peas, 1 potato, 5 beans and 1 tsp salt.

saute for 2 minutes or until vegetables are stir-fried.

also, add 2 cup water and stir well.

cover and boil for 10 minutes or until vegetables are almost cooked.

prepare the masala paste by taking 1 cup coconut in a blender.

also, add 8 cashews, 1 inch ginger, 1 clove garlic, 2 chilli, 2 tbsp poppy seeds, 1 tsp coriander seeds, ½ tsp fennel and handful coriander.

blend to smooth paste adding ¼ cup water.

add in prepared masala paste to the cooked vegetables and stir fry for 2 minutes.

now add 1½ cup water and stir well.

cover and cook for 10 minutes or until vegetables are cooked completely.

finally, enjoy veg kurma with poori or chapati.

- firstly, add vegetables of your choice to make khurma healthier.
- also, adding coriander leaves makes the masala paste rich and greener.
- additionally, adjust the consistency adding water as required.
