It is a popular and healthy lentil-stuffed Indian flatbread recipe from the rich and premium Rajasthani cuisine. Dal Ka Paratha, most commonly known as Moong Dal Paratha, is known for its texture and the layers it has to offer in each bite. In addition, due to the filling and protein-rich stuffing, it makes it one of the best paratha for lunch boxes and kids tiffin boxes. The bread is typically served with a combination of yoghurt dip/raita and spicy pickle. But it goes very well with different types of North Indian curries, including veg and non-veg. There are many different ways to make this simple Dal Paratha or lentil paratha recipe. Mixing the lentil stuffing directly with the wheat or paratha dough is the most common way. This removes the complication of stuffing, rolling and pinning. The other common way is to stuff the lentils into the wheat dough pockets. This may need some hand-eye coordination and may not be easy for beginners. Lastly, the same recipe can be made with other types of lentils or a combination of lentils.

Ingredients

  • 1 cup chana dal (soaked 3 hours)
  • ¼ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder / lal mirch powder
  • ½ tsp aamchur / dry mango powder
  • ½ tsp garam masala
  • ½ tsp cumin powder / jeera powder
  • ¼ tsp ajwain / carom seeds
  • ½ tsp salt
  • 2 tbsp coriander leaves (finely chopped)
  • 10 ball sized wheat dough
  • oil for roasting

Instructions

  1. firstly, in large vessel take 1 cup chana dal, soaked for 3 hours.
  2. boil for 15 minutes or till chana dal turns soft yet retain their shape.
  3. drain off the water and keep aside for 30 minutes or till water is drained off completely.
  4. transfer the cooked chana dal into a blender and grind to a fine powder.
  5. add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp aamchur, ½ tsp garam masala, ½ tsp cumin powder, ¼ tsp ajwain, ½ tsp salt and 2 tbsp coriander leaves.
  6. mix well making sure all the spices are combined well.
  7. pinch a ball sized wheat dough and dust with some wheat flour. check pizza paratha recipe to check how to prepare the wheat dough.
  8. further, roll it in a circle of about 5 to 5.5 inches in diameter.
  9. place a ball sized chana dal stuffing in the centre.
  10. take the edge and start pleating bringing to centre.
  11. sprinkle some wheat flour and roll slightly thick.
  12. on a hot tawa place the rolled paratha and cook both sides brushing oil.
  13. finally, serve hot chana dal paratha with sauce, raita or pickle.

Notes

  • First, soak the chana dal well to reduce the cooking time.
  • also, make sure to drain off the water completely once cooked, or else it won’t be easy to blend and the stuffing will turn to water.
