
Tomato base preparation

firstly, in a large kadai heat 2 tbsp ghee and saute 1 tbsp ginger.

add 5 cashew and saute until it turns golden brown.

keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp chaat masala and 2 tbsp tamarind chutney.

saute on low flame until the spices turn aromatic.

now add 2 tomato, ½ tsp salt and saute for 2 minutes.

boil for 3 minutes or until tomatoes soften slightly.

further, add 1 potato and saute well.

add 1 cup water and mix well. cover and boil for 5 minutes or until the ghee separates.

further, add 2 tbsp mint and 2 tbsp coriander. mix well.

tomato base for chaat is ready.

Jeera sugar syrup preparation

firstly, in a saucepan take 2 cup water, ¼ cup sugar, ½ tsp cumin powder, ½ tsp chaat masala and ¼ tsp chilli powder.

mix well and boil for 3-5 minutes or until the sticky sugar syrup is formed.

Tamatar chaat serving
-
for serving tamatar chaat, in a plate add prepared tamatar base.

top with 1 tsp ghee and 2 tbsp fo prepared jeera sugar syrup.

further top with sev or namak pare and coriander leaves.

finally, enjoy banarsi tamatar chaat with chai.

Notes
- firstly, make sure to adjust the tanginess based on tomatoes.
- also, do not mash tomatoes completely, as we need to enjoy the bite of tomato.
- additionally, prepare the chaat with desi ghee for best flavour.
- finally, banarsi tamatar chaat recipe tastes great when sweetness and tanginess is well balanced.
