An easy and simple traditional Indian sweet recipe made with a combination of wheat flour and chickpea flour with sugar syrup. Aate Ki Barfi or Wheat Burfi is a popular North Indian or Gujarati Cuisine particularly made during the winter season for extra calories. It may often compared with the Sukhdi or Gur Papdi recipe, but is 2 different recipes. The Sugar-based barfi is more often attractive and pleasant in taste and texture. But jaggery-based recipes are compared to more healthy ones. There are many different types of Aate Ki Barfi barfi recipes, but the most common is to mix with other types of flour. Wheat and Besan combination is a perfect choice which not only makes it creamy and rich but also gives a perfect texture to the barfi recipe. The other most popular combinations are wheat and plain flour. This is more visibly attractive with attractive color to the barfi. It can also be made with rava and wheat flour, thus making a crunchy barfi.

Ingredients

  • 1½ cup atta / wheat flour
  • 1½ cup besan
  • 1 cup ghee
  • 3 tbsp rava / semolina (fine)
  • pinch saffron food colour
  • 1½ cup powdered sugar
  • ½ tsp cardamom powder
  • 2 tbsp nuts (chopped)

Instructions

  1. Firstly, in a large kadai take 1½ cup atta and 1½ cup besan.
  2. Dry roast for 5 minutes or until the flour turns aromatic.
  3. Add 1 cup ghee and start roasting.
  4. Also, add 3 tbsp rava, pinch saffron food colour and roast on low flame.
  5. Roast until the flour turns golden brown and ghee releases.
  6. Cool the flour slightly by mixing continuously.
  7. Once the mixture is slightly warm, add 1½ cup powdered sugar, ½ tsp cardamom powder and 2 tbsp nuts.
  8. Mix well making sure everything is well combined.
  9. Further, transfer the mixture to the tray and level uniformly.
  10. Top with nuts and allow to set.
  11. Once the burfi has been set fully, cut to the required shape.
  12. Finally, enjoy Aate Ki Barfi Recipe for a month when stored in an airtight container.

Notes

  • Firstly, make sure to roast on low flame else the flour will be sticky to the mouth.
  • Also, adding besan gives a nutty flavour and rava gives a crunchy bite to the burfi.
  • Additionally, you can reduce the amount of ghee depending on the flour.
