It is basically a simple and easy side dish recipe from the flavoured Rajasthani cuisine made with large green chilies. Bharwa Mirchi is typically made with long thick green chilies with besan or chickpea flour-based stuffing. The ingredients used for this recipe are basic and can be easily available in any dry-season state. Rajasthan is a dry and hot climate state, and the recipe suits its demographic. Moreover, the heat from the chiles provides the necessary, and hence it is prominent in Rajasthani cuisine. In addition, the use of Bharwa Mirchi or Stuffed Chilies is multiple. Typically, it is made and served as a side dish snack, but it can also be made as gravy-based curries for roti and rice. The curry or gravy taste depends upon the use or types of chilies. Typically mild to medium taste chilies are most recommended, but not limited to it.Step-by-step

firstly, in a pan heat 2 tbsp oil. add ½ cup besan and roast on low flame.

roast until the besan turns golden brown and aromatic.

transfer to the bowl and cool completely.

add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, pinch hing, ½ tsp salt, and 1 tsp aamchur.

mix well making sure everything is well combined.

take chilli and slit in the centre.

stuff the masala generously. if the chillis are spicy, you can remove the seeds of chilli.

now heat 2 tbsp oil. splutter 1 tsp cumin, 5 cloves garlic and ½ onion.

add in stuffed chilli and fry for 2 minutes.

cover and simmer for 5 minutes or until the chilli softens. fry in between to prevent the chilli from burning.

add in leftover masala and mix well.

simmer for 3 minutes or until everything is well combined.

now add 2 tbsp coriander and mix well.

- Firstly, make sure to roast the besan on low flame, else the besan will taste raw.
- Also, make the masala spicy, or else the stuffing will taste bland.
- Additionally, you can also add garlic and ginger paste to the stuffing for variation.
