About
It is a tasty and flavored versatile hot beverage made by boiling and frying pumpkin and other vegetables before it is converted into a thick liquid. In other words, pumpkin soup is a perfect appetizer or meal starter that should easily stimulate the appetite and help the digestive aid. Traditionally, the soup is just made with pumpkin with the additional roasted onions and garlic. However, it can also be made with other vegetables to make either vegetable pumpkin or just a veggie soup. Soup recipes have become a popular meal starter over the years. Traditionally, it was treated as a complete meal, but then it has transformed to be a part of the meal. Even pumpkin soup with garlic bread was considered a full comforting meal. But the desire for more variations has made any soup recipes the appetizer or a part of the meal.Ingredients
- 2 tbsp olive oil
- 1 onion (thinly sliced)
- 2 clove garlic
- 2 cup 400gm pumpkin, sliced
- ½ tsp salt
- ½ tsp pepper (crushed)
- 2 cup water
- cream to garnish
Instructions
- Firstly, in a large kadai heat 2 tbsp olive oil. Alternatively use any neutral flavoured oil or butter.
- Further saute 1 thinly sliced onions till it shrinks.
- Also saute 2 clove garlic.
- Now add 2 cup (400gm) sliced pumpkin. use any pumpkin of your choice.
- Also add ½ tsp salt and ½ tsp pepper.
- Saute for a minute or 2 till it changes colour slightly.
- Furthermore add 2 cup water and mix well.
- Cover and boil for 15 minutes on medium flame.
- Cook the pumpkin well and allow to cool lightly.
- Transfer to the blender and blend to smooth paste.
- Pour the prepared pumpkin soup into bowl and garnish with a tbsp of cream. Alernatively use greek yogurt if you are diet conscious.
- Finally, serve pumpkin soup sprinkled with black pepper or store in refrigerator for a week and enjoy when required.

The recipe is very simple to make with few basic ingredients used to prepare it. Yet some important tips to make it –- Right Pumpkin – The choice of the right pumpkin is critical to making a perfect balanced soup recipe. It has to be fresh, sweet, and flavored pumpkins. Ideal ones are sugar or pie pumpkin to prepare the soup.
- The texture of Soup – The consistency of the soup has to be silky smooth without any lumps in between. Once the pumpkin is roasted and cooked, blend it to a smooth thick paste by adding water in batches.
- Balanced Flavor – The soup has to taste a combination of flavors. As sweetness is loaded from pumpkin, the soup has to be generously spiced with herbs and spices for sweet and hot flavors.
- Seasoning & Toppings – Once the soup is prepared, it can be topped with cream, milk, or yogurt with additional mixed herbs & spices. It is not mandatory, but elevates the taste and flavor.
- Experiment – The soup recipe can be experimented with other vegetables to make it extra flavored. Particularly, if just pumpkin is monotonous, it can be mixed and matched with other balancing vegetables.
Notes
- Firstly, if you have an oven, then roast pumpkin, onion, and garlic in the oven for 30 minutes at 180 degrees Celsius. This helps to get the roasted flavor in soup.
- Also add parsley, basil, or rosemary for more flavor.
- Additionally, adding cream is optional, use Greek yogurt if you are diet-conscious.
- Finally, pumpkin soup can be extended by adding potato and carrot while boiling.
