Perfect Desi Fusion Wrap**:** The Paneer Frankie, also known as the Paneer Kathi Roll in many parts of India, is a delicious fusion street food. It combines the robustness of Indian cooking with the convenience of global fast food. With its spicy and smoky paneer filling, soft wrap, and spicy condiments, it has become a popular choice among all age groups, including schoolchildren and office professionals. Humble Yet Rich Origin: The roots of this popular wrap can be traced back to Calcutta, also known as Kolkata, where the Kathi Roll originated. Traditionally made with skewered kebabs wrapped in roti or chapati, it was a convenient, fast meal for office-goers and labourers. Over time, as vegetarian demand grew, the roll adapted, and paneer emerged as the star ingredient in its veg-friendly version. The term “Frankie” later became popularised in Mumbai, inspired by global wraps and rebranded by local food chains. Street Food That Feels Like a Meal: Despite being a typical street food, the Paneer Roll never loses its bounty feel. Whether purchased from a roadside stall, packed for a train journey, or served in trendy cafés, it remains a filling and balanced meal. A simple story of Indian flavours wrapped in modern convenience, and a true example of how fusion food can become timeless street food royalty.

Ingredients

For dough:

  • 2 cup maida
  • ½ tsp salt
  • 1 tsp ghee
  • warm water (for kneading)
  • oil (for greasing)

For stuffing:

  • ½ cup thick curd
  • 1 tsp chilli powder
  • ¼ tsp cumin powder
  • ½ tsp garam masala
  • 2 tsp kasuri methi (crushed)
  • ½ tsp salt
  • 2 tsp oil
  • 1 cup paneer (cubed)
  • 2 tbsp oil
  • 1 inch ginger (finely chopped)
  • 5 cloves garlic (finely chopped)
  • ½ onion (sliced)
  • ½ capsicum (sliced)
  • ½ tomato (sliced)

For making wrap:

  • green chutney
  • onion (sliced)
  • cabbage (shredded)
  • tomato sauce
  • chaat masala

Instructions

  1. Firstly, in a large plate, take 2 cups maida, ½ tsp salt and 1 tsp ghee. Mix well.
  2. Add warm water and knead until you have a smooth dough.
  3. Grease with oil, cover and rest for 20 minutes.
  4. To prepare paneer stuffing, take ½ cup thick curd, 1 tsp chilli powder, ¼ tsp cumin powder, ½ tsp garam masala, 2 tsp kasuri methi, ½ tsp salt and 2 tsp oil.
  5. Mix well, ensuring all the spices are thoroughly combined.
  6. Add 1 cup paneer, and mix well. Marinate for 20 minutes.
  7. Heat 2 tablespoons of oil in a pan and add 1 inch of ginger and 5 cloves of garlic. Saute well.
  8. Also, add ½ onion, ½ capsicum, ½ tomato and stir fry.
  9. Now add the marinated paneer and cook until well done.
  10. Cook till the oil separates, and the paneer stuffing is ready.
  11. To prepare the wrap, once the dough has rested well. Kead again.
  12. Pinch a ball-sized piece of dough and roll it out thin.
  13. Spread oil and maida.
  14. Now fold a zig-zag to create layers. Also, roll the spiral and tuck it inside.
  15. Dust with maida and roll gently, slightly thick.
  16. Cook in a hot pan by spreading a little oil.
  17. Roast on both sides till they turn golden and slightly crunchy.
  18. To prepare the wrap, spread green chutney on the roti.
  19. Also, place 2 tbsp of prepared paneer stuffing.
  20. Top with onion, cabbage, tomato sauce, chaat masala and coriander.
  21. Finally, roll the Paneer Kathi Roll tightly and wrap it with baking paper.

Step-by-step
