It is a popular Indian deep-fried snack or condiment made with masala chickpeas coated with fresh and tasty peanuts. Peanut Masala, commonly known as masala peanuts, is a popular starter or appetiser served in restaurants or bakeries. It also serves as munching snacks in bars and street vendors, particularly in the evening. Serving these with hot beverages like masala chai, simple tea, or filter coffee makes it a mouth-watering combo meal. This simple Peanut Masala or Groundnut Masala recipe has many different variations. The most common way is to make it with a spiced chickpea coating and deep-fried until crisp. It can be air-fried or even baked as an alternative to deep frying, making it a healthy munching snack. Further, these deep-fried peanuts can also be served as a chaat. Adding finely chopped onions and tomatoes with a hint of lemon is another way of serving it.

Ingredients

  • ½ cup gram flour / besan
  • 2 tbsp rice flour
  • 2 tbsp corn flour
  • ¼ tsp turmeric / haldi
  • 1 tsp kashmiri red chilli powder
  • ½ tsp ginger garlic paste
  • pinch baking soda (optional)
  • ½ tsp salt
  • 2 cup 350 grams peanuts / groundnuts
  • 2 tsp oil
  • 3 tbsp water
  • oil for deep frying
  • ½ tsp chaat masala (optional)

Instructions

  1. firstly, in a large mixing bowl take ½ cup besan, 2 tbsp rice flour and 2 tbsp corn flour.
  2. also add ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp ginger garlic paste, pinch baking soda and ½ tsp salt.
  3. mix well making sure all the spices are combined well.
  4. further, add 2 cup skinned peanuts and 2 tsp oil.
  5. mix well, oil helps to coat peanuts with masala.
  6. further, add 2 tbsp of water and mix well.
  7. add 1-2 tbsp of more water in batches till the peanuts are coated well with besan.
  8. furthermore, add a tsp of rice flour and give a mix. this helps to separate peanuts.
  9. deep fry in hot oil or bake at 180-degree celsius for 20 minutes.
  10. stir occasionally and fry on low to medium flame.
  11. sprinkle ¼ tsp chaat masala and mix well. this helps to enhance the flavour.
  12. finally, enjoy crunchy masala peanuts or store in an airtight container for a month.

Notes

  • Firstly, adding corn flour is optional. However, it makes besan coating crisper.
  • Also, the same recipe can be used to make masala cashews or masala almonds.
  • Add a drop of red food for the bright red colour in masala peanuts.
