It is basically a variant of the popular North Indian or Punjabi cuisine butter masala curry with mushrooms as a key hero ingredient. In other words, paneer or chicken is replaced with button mushrooms to make a perfect dhaba-style mushroom masala curry or mushroom butter masala. It uses the same makhani sauce or gravy base, yet due to the use of mushrooms, the curry tastes unique with its own set of flavor and creaminess. There are many ways the same Mushroom curry can be prepared, which mainly differs from the set of ingredients used in it. The most popular way is to make it with a combination of mutter (green peas) with mushrooms which is also known as mushroom mutter masala. The other popular way is to make the same curry with mixed vegetables or with paneer which can also be the perfect choice for any type of Indian flatbread.

Step-by-step

Firstly, in a cooker heat 2 tbsp oil. add 1 tsp cumin, 1 inch cinnamon, 5 cloves, 3 pods cardamom, and saute until the spices turn aromatic.

Add 2 onions, 1 tbsp ginger garlic paste and saute until the onions turn golden brown.

Further, keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, and saute until the spices turn aromatic.

Now add 2 tomato, 1 tsp salt and cook until the tomatoes turn soft and mushy. I have chopped tomatoes in the chopper, to hasten the cooking process.

Once the oil separates from the tomatoes, add 2 tbsp curd and cook well.

Furthermore, add 200 grams mushroom, 2 chilli, and mix gently.

Now add 1 cup water and mix well adjusting the consistency as required.

Add 1 tbsp butter, cover, and pressure cook for 2 whistles.

Once the pressure settles down, add 2 tbsp cream, 1 tsp kasuri methi, ½ tsp garam masala, and 2 tbsp coriander. Mix well.

  1. Fresh Mushrooms – Always use fresh and quality mushrooms for this curry recipe. Avoid using stale or expired mushrooms as they may not introduce the same consistency or flavor to the curry.
  2. Cream & Yoghurt Combination – Using both helps to get the perfect amount of creaminess and richness to the curry. This is how any type of dhaba-style curry is prepared, but not mandatory.
  3. Consistency – The gravy of the curry must neither be thick nor thin. It should be silky with medium consistency.
  4. Tomato & Onion base – Choose ripe and juicy tomatoes with fresh onions. Finely chop them and fry them in oil till the oil separates. No shortcut for this or otherwise the gravy may taste raw.
  5. Spices & Spice Level – The recipe or the curry base has to be medium spicy due to the set of spices used in it. Yet you may increase or decrease the chili powder to alter the spice level.
